CHEESY LEEKS

 

Finely chop 3 – 4 medium leeks.

Cook in small amount of water till soft.

Drain thoroughly and mix with small tub soft cheese.

Turn into ovenproof dish and sprinkle with grated cheese.

Cook in hot oven until top is browned.

Can replace leeks with most vegetables if preferred.

 

 

Fricasse of Chicken

 

1lb cooked chicken

1½ oz butter

1½ oz flour

½ pint chicken stock

¼ milk

A little cream, crème fraiche

Seasoning

 

Heat butter in pan, stir in flour and cook gently.   Add stock and milk and stir until smooth.   (Add a little more stock or milk if desired).

Add diced chicken and heat gently for about 15 mins.

Stir in cream and seasoning.

Serve with creamed potatoes or cooked rice.
