If you have some PASTA left over it can be used in a warming soup.
Warm a carton or two of PASSATA – a tetra pack of sieved tomatoes bought cheaply from local supermarkets, or 2 cans of tomatoes chopped.
Stir in the PASTA.
Add a little sugar and season to taste.
You could stir in some cooked onion.
You can add some red lentils to add bulk and protein. Cook this with the PASSATA for 15 minutes before adding the PASTA.
This soup can be served with a little grated cheese on top.
Serve with crusty bread if you like.
