October recipe ideas – Using Leftover Vegetables



  • Mash together in a bowl any cooked leftover vegetables which should include potato to help bind it together.
  • In a large frying pan add no more than 2 dessert spoons full of olive or sun flower oil.  Heat until quite hot.
  • Add the vegetables to the frying pan and squash flat with a fork.  Allow to brown and then turn over, again allowing the vegetables to brown.
  • Don’t be tempted to fiddle about with the vegetables!

Serve with what ever you like – poached egg, sausage
